  • 3 ripe bananas ripe bananas mashed
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 eggs large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
Frosting
  • 8 oz cream cheese cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Mix mashed bananas, sugar, melted butter, and eggs until well combined.
  3. Stir in flour and baking soda until just combined.
  4. Pour batter into prepared pan and bake for 60 minutes or until a toothpick comes out clean.
  5. Let cake cool completely before frosting.
  6. Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over cooled cake.

Notes

For a richer flavor, add chopped nuts or chocolate chips to the batter.
