Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
Wet Ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/2 cup vegetable oil
  • 2 large eggs eggs
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar sifted

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.
  2. Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, oil, and eggs.
  3. Combine wet and dry ingredients until just mixed. Pour batter into the prepared pan.
  4. Bake for 60 minutes or until a toothpick inserted comes out clean. Let cool.
  5. Beat cream cheese, butter, and powdered sugar until smooth. Spread over cooled cake.

Notes

For a richer frosting, add a teaspoon of vanilla extract.
