Ingredients
  

Pasta
  • 400 grams spaghetti
  • 150 grams pancetta or bacon diced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil

Method
 

  1. Cook spaghetti in boiling salted water until al dente, then drain.
  2. In a pan, cook pancetta until crispy, then remove from heat.
  3. Whisk eggs and Parmesan in a bowl.
  4. Combine hot pasta with pancetta, then quickly mix in egg mixture to create a creamy sauce.
  5. Season with black pepper and serve immediately.

Notes

Use freshly grated Parmesan for best flavor.
