  • 1 1/2 cups almond flour gluten-free
  • 1/2 cup coconut sugar
  • 1 teaspoon teaspoon baking soda
Wet Ingredients
  • 3 ripe bananas mashed bananas for moisture and sweetness
  • 1/4 cup coconut oil melted
  • 2 large eggs eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. In another bowl, mash bananas and whisk in eggs, coconut oil, and vanilla.
  4. Combine wet and dry ingredients, then fold in grated carrots.
  5. Pour batter into the loaf pan and bake for 45 minutes until golden.
