Ingredients

  • 3 ripe bananas ripe bananas mashed
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 eggs large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Cinnamon Sugar Coating
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, sugar, melted butter, and eggs until well combined.
  3. Stir in flour, baking soda, and salt until just combined.
  4. Pour batter into prepared pan and smooth the top.
  5. Mix sugar and cinnamon to make the coating, then sprinkle over the batter.
  6. Bake for 60 minutes or until a toothpick inserted comes out clean. Cool before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract to the batter.
