Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix mashed bananas, flour, sugar, eggs, and melted butter to make the cake batter. Spread evenly on the prepared sheet.
- Bake for 15 minutes or until a toothpick inserted comes out clean. Let cool slightly.
- Mix cream cheese, powdered sugar, and vanilla to prepare the filling. Spread over the warm cake.
- Carefully roll the cake with filling inside, then chill for 30 minutes. Top with chopped pecans and candied ginger before serving.
Notes
For a richer flavor, toast the pecans before adding as topping.
