Ingredients
  

Cake Batter
  • 3 large ripe bananas mashed
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
Topping
  • 1/2 cup chopped pecans
  • 1/4 cup candied ginger chopped

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix mashed bananas, flour, sugar, eggs, and melted butter to make the cake batter. Spread evenly on the prepared sheet.
  3. Bake for 15 minutes or until a toothpick inserted comes out clean. Let cool slightly.
  4. Mix cream cheese, powdered sugar, and vanilla to prepare the filling. Spread over the warm cake.
  5. Carefully roll the cake with filling inside, then chill for 30 minutes. Top with chopped pecans and candied ginger before serving.

Notes

For a richer flavor, toast the pecans before adding as topping.
